How to Make Luscious Ice Cream with Just One Ingredient

Have you ever seen a gorgeous ice cream recipe in a book or magazine that you’ve been dying to make? Ever had that heart-sinking feeling that comes with the instructions at the end of said recipe, ‘freeze in an ice cream machine according to the manufacturers instructions’?

I have.

So one day I decided to fork out a large amount of cash for an appliance that could barely fit in my tiny kitchen. But an ice cream machine I wanted, and an ice cream machine I would have. And a proper one, with an internal compressor so I could happily make batch after batch of cool creamy goodness.

The thing is, apart from the expense and the space, making ice cream the traditional way is hard work. And it takes time. First you have to make an egg based custard, making sure you don’t let it curdle. Then there’s the chilling of the custard and freezing in your ice cream machine. And then you need to let it harden up in your freezer for a while.

Not exactly an instant fix.

But there is a solution. A one ingredient ice cream that couldn’t be more simple. Just take some frozen bananas and whizz them in your food processor until they’re super creamy and lovely.

We’re talking every thing you love about ice cream. All in a few minutes. And it’s super healthy too. No cream or eggs. What are you waiting for?

Banana Ice Cream

Feel free to play around with the flavorings. You could pretty much add anything that takes your fancy. The riper your bananas are, the more intense the flavour will be. Other frozen fruit can be used but may need a little sugar added. I always have a packet of frozen raspberries on hand for when I need a quick & simple dessert.

2 bananas

1. Either freeze the bananas whole or peel and chop and freeze in freezer bags.

2. Remove bananas from the freezer about 10 minutes before you’re ready to eat.

3. Peel the whole bananas and pop them in your food processor, or put them in a small dish and use your immersion blender.

4. Whizz until you have smooth creamy texture. It may take a little while if your bananas are too frozen so be patient!

      Did you read down to the recipe? Jules says you can do it with ANY frozen

    This is absolutely delicious! My family laughed at me the first time I told them, but it is so good. Tastes a lot like a frozen banana pudding. I have considered adding some crushed vanilla wafers to it. Yum!

    Make sure the bananas are extra ripe before freezing too. And if you want a smoothie/shake experience add vanilla soy or almond milk. You can always add berries to the shake too.
