School starts this week for us, and with the paperwork and schedules (something I’m quite fond of), comes this hurried and rushed feeling, this need for organization lest someone forget their homework on the counter, another slip out the door with their hair in knots and their teeth not yet brushed. It is in those moments when I miss the lazy summer mornings, sipping coffee as my kids slowly decide what to eat, each something different, and I have the time to accommodate them.
If you’re anything like us, then you’re probably also in need of some breakfast organization and morning routine crack down measures for the next few weeks. While I’ll make plenty of slow-cooked oatmeal, egg sandwiches and pancakes before the school year is up, I know that there are some things I need to fall back on for those days when time seems to be moving faster than any of us can even potentially consider in the morning.
For mornings when the importance of breakfast isn’t lost on me but the time to prepare it is, I turn to easy alternatives that can be thrown together in no time, but still catch the eye and grab the attention of my gaggle of kids. To put it simply, I feed them yogurt.
| Easy Breakfast Parfait Recipe |
- ½ cup whole grain cereal or granola (preferably with nuts for a bit more stick-to-your-ribs qualities)
- ½ cup plain Greek yogurt
- ½ cup fresh or frozen strawberries, blueberries or raspberries
- 1 tablespoon honey (optional)
- In your favorite glass or bowl, layer ¼ cup cereal, ¼ cup yogurt and ¼ cup berries. Repeat. Drizzle with honey, if desired. Serve immediately with a spoon to your hungry child
