5 Easy Pantry Meals for Busy Weeknights

Weeknight dinners can be harried. Homework, music lessons, club meetings, gym workouts — these good things can keep you out and about during rush hour, and the siren song of the drive-thru can be tempting on those nights.

You know that homecooked is better and more economical, but do you have what you need at home? Or do you have to run by the crowded grocery store at the end of a busy day?

Solve a week’s worth of dinner dilemmas by keeping the fixings for these five easy meals on hand. They’re regular pantry and refrigerator staples that can come together quickly for great tasting suppers.

The Menu Plan

Beans and Rice

People are always so surprised when I tell them that beans and rice is a regular meal at our house that the whole family loves. Maybe they don’t expect the wealth of toppings that can make this humble meal so much more.

Heat up canned beans and pair with simple cooked rice. Top with shredded lettuce, grated cheese, salsa, and sour cream. Serve tortilla chips on the side.

Pasta with Red Sauce, Green Salad, French Rolls

This is a meatless main dish that is always filling.

Heat up your favorite sauce while the noodles are cooking. Serve with a green salad and crusty rolls on the side. Pass grated parmesan for sprinkling.

Pancakes with Sausage and Fruit

Breakfast for supper is a super easy meal to pull off. Kids of all ages will be pleased after sitting down to this meal.

Use this recipe for easy “from scratch” pancakes. Fry up some breakfast links and serve fruit on the side or as a pancake topping. Pass the maple syrup for drizzling.

Soup & Bread Night

You can easily make your own soups at home, but for busy nights, don’t be afraid to use the canned variety. There is a huge variety out there, so feel free to experiment. “Get ‘em fed” is always a great course of action.

Serve crusty french rolls on the side.

Salad Bar

Real men will eat salad, especially when you pile on the protein. This is also an opportune time to use up the leftovers of the week. Cut any leftover rolls up and make croutons.

Offer a variety of topping to go with the lettuce: garbanzo beans, black beans, drained tuna, hardcooked eggs, grated cheese, rice, pasta, cucumbers, tomatoes, salsa. Mix up a simple oil and vinegar dressing or use your favorite bottled variety.

    Great suggestions! I like to have “bin meals” in my pantry. I use recipes like these and store all the pantry-ready (and sometimes pre-measured) ingredients along with the recipe in a bin so that on those busy nights I can just grab the bin, add fresh ingredients from the fridge, and dinner is done!

      Oh, what a great idea! I have read of doing something similar with freezer meals, but it is almost like you have created your own *hambuger helper* type convenience meals. Cool!

    I like this list. Your beans & rice is my taco–I serve the same ingredients with a whole wheat tortilla instead of rice. Sometimes I add ground beef or chicken & make enough meat to freeze some for the next ‘taco’ night.. This meal is a staple for us.

    I’m always looking for something at the last minute! I love breakfast for supper but don’t think it would fly with my hubby. He also balks at soup and bread for supper, which I love. Maybe he’d go for the salad bar!

    Don’t forget asian stir fry! It’s my go-to meal. Heat up a big wok, toss in any leftover meats in your fridge, some frozen veggies that are already chopped, and serve with brown rice (I cheat and use the quick kind that cooks in 5 minutes) Season with soy sauce and whatever spices you have on hand (ginger, onion powder, garlic powder, sesame oil…even a couple spoonfuls of peanut butter for a peanut sauce) Done in 20 minutes!

    Soup and bread is enough to be thankful for. I often make large batches of roasted vegetables(and garlic) and freeze soup-sized portions for a lazy night or serve it alongside weekend brunch.

    When the soup is fairly thick nobody even asks for bread. If I want to ‘stretch’ the soup a little bit more, I add a handful or two of mini-pasta shapes while heating it up.

    We do Saffron rice (also called Yellow rice), a can of black beans, and peas to make a quick, pantry, meatless meal. We also do bean burritos pretty often. I need to do breakfast for dinner- I think its a great idea but never think of it when everyone’s hungry and its 5 o’clock :)

    My favorite procastination story and one that I can relate to is the Spongebob episode in which he has to write an essay and decides that he has to clean a small mess in the kitchen sink first. Next thing he’s cleaning the entire kitchen. Spongebob then continues to find other things that he must clean or do before he tackles his essay. I love the Eat the Frog expression. I’ll have to remember to think about that :-)
